The Best of Times Cooking

Inspired by the story of a woman who lost all her recipes in a fire, along with her cook book colllection, I signed on to help replace some with my own favorite recipies. Once I got started, I realized this was one way to make my recipes available to my nearest and dearest if they will bookmark the blog.

Pumpkin Dip

Whether for Halloween or another Autumn event or celebration, this is an interesting and yummy departure from the usual salty cocktail fare. If you want to be really fancy, serve it in carved out pumpkin, in a pint container that corresponds with the hole you cut.

Pumpkin Dip

2 cups confectioner's sugar
8 ounces cream cheese
16 ounces pumpkin pie filling
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1 box Swedish thin Ginger snaps (purchased)

Combine sugar and cream cheese in a mixing bowl. Beat until fluffy, adding pumpkin by the spoonful. Add spices and mix well. Turn into serving bowl or small, cleaned out pumpkin. Serve with very thin Swedish gingersnaps.
