The Best of Times Cooking

Inspired by the story of a woman who lost all her recipes in a fire, along with her cook book colllection, I signed on to help replace some with my own favorite recipies. Once I got started, I realized this was one way to make my recipes available to my nearest and dearest if they will bookmark the blog.

Mary Ann’s Lace Cookies

This small amount of batter makes dozens of dainty, very thin cookies. Follow the directions EXACTLY the first time until you realize how much they can spread and how little batter each one takes. Don't try to make these on a humid day.

Mary Ann’s Lace Cookies

1/2 cup melted butter
1 cup quick Oatmeal
3 Tablespoons flour
1 egg
3/4 Cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
Confectioners sugar

Preheat oven to 375°F. Heavily grease and flour a cookie sheet or line with parchment or a Silpat pad. In a saucepan melt butter. Stir in remaining ingredients. Drop tiny (1/4-1/2 teaspoons) bits of batter on cookie sheet, leaving space for them to spread a lot. Bake for six minutes, until the edges turn golden. They will continue to cook as they cool off. Remove to cooling rack as soon as they are cool enough to move (about 5 minutes) Before serving, sprinkle liberally with confectioners sugar.
