The Best of Times Cooking

Inspired by the story of a woman who lost all her recipes in a fire, along with her cook book colllection, I signed on to help replace some with my own favorite recipies. Once I got started, I realized this was one way to make my recipes available to my nearest and dearest if they will bookmark the blog.

Maddies Hay Stacks

Maddies Hay Stacks -- My 13 year old grand daughter's very favorite. Great for a football crowd; just multiply the recipe.

I arrange small bowls of each of these things, and let people do the assembling.

1 pound cooked ground meat (turkey or beef) or cooked chicken, diced small
taco seasoning
water
(Combine and cook until done)

red or black beans, drained and warmed.
Spanish rice, prepared
Shredded cheddar
Plain tortilla chips
Lettuce, sliced in ribbons
Tomato, diced
Onions, diced
Olives sliced or chopped
Sour Cream
Guacamole

Present in following order:
Stack of wide bowls…

Crush chips in bowl
Top with cheese
Then warm meat
Followed by warm rice, then warmed beans
lettuce
tomato
onion,
olive
sour cream,
guacamole

Grab fork and dig in.
