The Best of Times Cooking

Inspired by the story of a woman who lost all her recipes in a fire, along with her cook book colllection, I signed on to help replace some with my own favorite recipies. Once I got started, I realized this was one way to make my recipes available to my nearest and dearest if they will bookmark the blog.

Lieb's Cabbage Soup

This recipe is included for several reasons. It feeds an army. It was given to me by a friend who owned a deli near our office many years ago. And it won a soup cook-off for me. What more do you want? Feel free to either diminish the recipe by half, or freeze the leftovers.

Lieb's Cabbage Soup

2 pounds Pastene Ground tomatoes
1 pound Pastene Stewed tomatoes
2 gallons water
1/4 cup chicken paste base
1/4 cup beef paste base
1 1/2 tablespoons Accent® seasoning mix
1 teaspoon pepper
1 1/2 onion chopped
4 heads cabbage
7 soup bones, rinsed and drained
1 jar sour salt
2-3 cups sugar

Combine tomatoes and chop til smooth. In a stock pot combine water, bases, seasonings and onion. Add cabbage and tomato mixture, and bones. Cook 15 minutes. Add sour salt. Let boil 1/2 hour. Add 2 cups sugar. Cook 1 1/2 hour more. Taste for sweetness and add more sugar if necessary
Serves 18.
