Once I got started, I realized this was one way to make my recipes available to my nearest and dearest if they will bookmark the blog.

Easy Broccoli Soup

Who says soup has to simmer for hours? This is about as much of a no-brainer as you will find. And it’s good!

Easy Broccoli Soup

10 ounces frozen broccoli chopped
1 cup chicken broth
1 medium onion chopped
1/2 teaspoon nutmeg
1 can cream of mushroom soup
1 teaspoon butter
1 cup sour cream

In saucepan, combine frozen broccoli, broth, onion and nutmeg. Simmer 5 minutes. Let cool slightly. Place in blender or food processor, in batches if necessary. Add soup and butter. Blend just until mixed. (may be made ahead and chilled at this point) Return to pan and reheat. Add sour cream just before serving, stirring and warming thoroughly. Serves 4.

Notes: I usually double this recipe. One batch isn’t much.
