Inspired by the story of a woman who lost all her recipes in a fire, along with her cook book colllection, I signed on to help replace some with my own favorite recipies. Once I got started, I realized this was one way to make my recipes available to my nearest and dearest if they will bookmark the blog.

Sausage Ring

Our Christmas Morning Brunch dish… this can be made in a ring mold and, once unmolded, the hole can be filled with cooked scrambled eggs. Unmolding can be tricky, though. Bulk sausage comes in the frozen food section, in a round, tube shape.

Sausage Ring

2 pounds Mild bulk sausage (Jimmy Dean)
2 eggs beaten
1 cup dry bread crumbs
1 large baking apple, peeled and finely chopped
1 tablespoon parsley

Preheat oven to 350. Mix ingredients together and press into a 6 cup ring or loaf pan. Place an on baking sheet. Bake uncovered for 45 minutes. Drain excess juice and discard. Unmold onto heatproof plate and keep warm till serving time. May be made ahead, sliced chilled and reheated.
