Inspired by the story of a woman who lost all her recipes in a fire, along with her cook book colllection, I signed on to help replace some with my own favorite recipies. Once I got started, I realized this was one way to make my recipes available to my nearest and dearest if they will bookmark the blog.

Mini Blini

These can be made ahead of time and frozen for months in an airtight container. Make plenty as they just fly! Nice for a breakfast of brunch.



2 Pepperidge Farm loaf white bread, crusts removed
16 ounces cream cheese, softened
2 egg yolks
1 cup sugar
2 sticks butter, melted
cinnamon sugar

Roll out bread until it is flexible enough to roll up. Preheat oven to 350° F. Combine cream cheese, sugar, egg yolks until combined. Spread on bread. Roll up and tuck end underneath to hold it in place on a cookie sheet. Place in freezer until frozen. Slice in quarters. Brush with butter roll in sugar Bake 20 minutes.
