Inspired by the story of a woman who lost all her recipes in a fire, along with her cook book colllection, I signed on to help replace some with my own favorite recipies. Once I got started, I realized this was one way to make my recipes available to my nearest and dearest if they will bookmark the blog.

Mussels with Linguica

Mussels with Linguica

2# mussels, cleaned scrubbed and steamed open
2 oz. Linguica
Pesto
Ital Bread crumbs
(Red pepper flakes or finely minced dry pepper)

Remove mussels from shell, retaining half of each shell. Combine crumbled, cooked and blotted linguica from pan to paper towel. Mix in Italian bread crumbs, some garlic, a little pesto, and finely minced pepper, if desired. Put mussels in shell, top with mixture, add a little parmesan on top.

Bake 8-10 minutes until heated through.
